Onion Tomato Chutney



Preparation Time : 10 Min.
Cooking Time : 6 Min.
Complexity : Easy

Ingredients :


Onion : 1
Tomato : 1
Chana Daal : 1 tbsp
Whole red chilies : 2
Coconut : 1 tbsp
Oil : 1 tbsp
Salt : As per taste

To Temper :

Oil : 1 tsp
Mustard seeds : 3/4 tsp
Urad daal : 1 tsp
Curry leaves : 4-5
Asafoetida : 1 pinch


Method :

  1. Cut onion and tomato in small chunks.
  2. Heat oil in a pan and add whole red chilies and chana daal.
  3. Fry them until chana daal gets golden brown color. Transfer them to a plate and keep aside.
  4. Now fry onion until transparent and then add tomato. Fry them until tomato turns soft.
  5. Remove them from flame and let them cool. 
  6. Now combine fried tomato, onion, red chilies and chana daal. 
  7. Add salt and coconut and grind everything to a smooth paste with the help of little water.
  8. Transfer this paste to a bowl.
  9. Now heat a tea spoon of oil in a pan and add mustard seeds. Let them sizzle.
  10. Add asafoetida, curry leaves and urad daal.
  11. Roast them until urad daal turns golden brown.
  12. Pour this temper to the tomato paste and mix well.
  13. Onion tomato chutney is ready. Serve it with idli, dosa or uttapam.

Eggless Red Velvet Cake







Preparation Time : 30 min.
Baking Time : 30 min.
Baking Temperature : 350 degree Fahrenheit
Complexity : Medium

Ingredients :

Maida : 1 cups
Unsalted Butter : 1/4 cup
Condensed Milk : 1/2 cup 
Aerated cola : 100 ml
Sugar : 1/4 cup
Coca Powder : 2-3 tbsp 
Baking Powder : 1/2 tsp
Baking Soda : 1/2 tsp
Vanilla Extract : 1-2 tsp
Red food color : 1 tsp


Method :



  1. Sieve maida, baking powder and baking soda together and keep aside. 
  2. Take sugar and butter in a bowl and beat them until mixture becomes fluffy.  
  3. Add condensed milk and beat again for 3-4 min.
  4. Add vanilla extract and red food color and mix well. 
  5. Add aerated cola and maida mixture gradually and beat after each addition.
  6. Pour the batter in a greased and dusted baking pan. You can take baking pan of your choice. I took a heart shape pan. 
  7. Pre-heat oven at 350 degree Fahrenheit. 
  8. Place the pan in oven and bake it for 30 min.
  9. Take a tooth pick and poke it to check whether it comes out clean or not, if not then bake it for another 5-10 min.
  10. Turn off the oven. Eggless red velvet cake is ready. Let it cool down and invert the pan over plate or tray to unmould the cake.
  11. After cooling down decorate it in your own way. Enjoy!!

Missi Roti




Preparation Time : 10 min.
Cooking time : 15 min.
Complexity : Medium

Ingredients:

Gram flour/ Besan : 1 cup
Wheat flour : 1 cup
Turmeric powder : 1/4 tsp
Red chili powder : 1/2 tsp
Carom seeds : 1/2 tsp
Asafoetida  : 1 pinch
Ginger paste : 1 tsp
Green chili, chopped : 1
Onion, chopped : 1
Kasoori methi : 1 tbsp
Oil : 2 tbsp
Salt : as per taste

 

Method :

  1. In a big bowl add wheat flour and gram flour.
  2. Add salt, oil and all the spices.
  3. Add chopped green chili, onion, ginger paste and kasoori methi and mix well.
  4. Add water and knead a smooth dough.
  5. Cover and rest aside for 15 min.
  6. Make equal size balls from dough and roll to make medium thick roti.
  7. Place roti over medium hot tawa and cook it from both side with the help of oil until golden brown spot appear.
  8. Serve hot.
